Introducing our new Half Day Evening Fire School
It’s been a while since we’ve talked about High Grange Fire School, our outdoor barbecue cooking classes, but Spring has sprung (just don’t look out the window) and this weekend we are beginning again!
Our Full Day Fire School is a whole day of learning, cooking, eating and laughing all round our wide variety of woodland fire pits, ceramic barbecues (including 7 Big Green Eggs), an Ofyr fire ring, and pizza ovens. Luke has taught at the brilliant London Barbecue School, and was the demonstration chef at Borough Market, and he is brilliant at imparting his over twenty years of cooking experience and knowledge in a relaxed, patient and informal way (he was the homeschooler of children, rather than me…).
The Full Day Fire School is once a month on a Saturday daytime, and is our signature fine-honed course which covers a huge variety of outdoor fire cooking, British barbecue techniques and butchery - taking in everything from how to light your fires, temperature control, using smoke as an ingredient, and cooking vegetables, meat and fish using a variety of different techniques. Moreover, its a gorgeous day out, alone or with friends, to crack open a beer, chop some wood and discuss all things outdoor cooking in the beautiful Devon sunshine overlooking our neighbouring rolling fields. It begins with coffee and breakfast on the Ofyr, and ends with a sit down feast. You can look at our 5* reviews on Tripadvisor for some of the great feedback we’ve had.
We thought, however, that some of you may prefer a shorter session, for example if you’re just dipping your toe into outdoor cooking, or as a refresher; or to cover specific techniques or meals. That’s why we’re delighted to announce our new Half Day Fire School. We decided to make these 5-9pm on a Wednesday evening once a month, to allow you to drop by after work or during your Jurassic Coast holiday, and spend a delightful evening in our woodland setting, lit up with twinkly fairy lights. They will feature the best ingredients, the loveliest inclusive atmosphere, and the same high end High Grange experience as our signature course, finishing up with a sit down meal.
We’ve split these into two categories:
The Perfect Steak
This is a class for connoisseurs of great beef. We have found a supplier who we firmly believe produces the best beef in the world. In this class we cover various cuts and cooking techniques - from 'dirty' cooking the various flank steaks, to reverse searing ribs or rumps, not forgetting the sides of course!
Introduction to Fire Cooking
If you want to brush up on your barbecue skills or are a beginner who wants to improve your repertoire, this is the course for you. We will cook a variety of the best local and seasonal ingredients on our huge array of barbecues, fire pits and outdoor ovens. We will cover the lighting of fires, the use of different chips and charcoal, and various methods for cooking the most delicious meat, fish and veg.
Our March Full Day Fire School is sold out, but we have spaces in our other later groups which are on once a month until October. Half Day evening fire schools begin on 30th March from 5-9pm and are also on once a month until October. You can book here and feel free to email us if you have any questions about what type of course would be best suited for you. We can also organise bespoke private and corporate cooking classes and experiences on request.
