HIgh grange Fire School

Spend a day in our beautiful woodland with a view of rolling Devon hills. You’ll be chopping logs, preparing ingredients and learning now to cook on all manner of fire pits, ceramic Kamado Joe barbecues and even cooking direct in the ground.

You’ll eat incredible food and lots of it - we include breakfast, lunch and a feast supper on our communal oak table.

We pride ourselves on teaching as many women as men - we’re perfect for hen and stag nights, birthdays and other special occasions.

Running of the day

Once you have arrived at High Grange, we’ll start the day with coffee, breakfast and a chat before getting stuck into the morning’s tasks. We’ll start by preparing the outdoor kitchen for the day by firing up the Vulcanus fire pit, Braai master and one or two of our Kamado Joe ceramic barbecues - you will have a masterclass in each, learning about temperature control, smoke as an ingredient, loading and lighting. We’ll then get stuck into prepping lunch and dinner. 

Lunch will be a social affair – we’ll sit at our oak table or around the fire and feast on the shellfish or chops that we’ve just grilled. We then continue with our master classes and spend some time on vegetables, sides and condiments to turn our long slow cook into the most incredible meal which we’ll enjoy in the beautiful Devon sunshine overlooking our neighbouring rolling fields.

You’ll head home, full of delicious food and new skills, having made a few new friends and enjoyed plenty of laughs.

FIRE SCHOOL DAY

Our flagship course that we’ve been running, tweaking and perfecting since day one. You will learn about cooking over wood and charcoal on a huge variety of different barbecues and firepits. This is an ingredients led day with some absolutely world class, seasonal ingredients from Lyme Bay and our amazing local East Devon larder. A multi-award winning course that we’re incredibly proud of, we’ll cover a huge variety of outdoor fire cooking, barbecue techniques and butchery with Luke, a chef and tutor of over 25 years.

I firmly believe that there are NO stupid questions and I’ll happily share all the daft mistakes I’ve made on my journey. People can do as much or as little ‘work’ as they like – you might hang back with a beer or you might be the first digging a pit in the woods to bury a haunch of venison… I would say its a food experience rather than a ‘class’ you will learn lots but I want you to remember the day, not necessarily the recipe.

MASTERS OF FIRE

Our original Fire School on steroids…. Perfect if you’ve been on one of our fire schools already and want to come back for more. A similar structure to the day but completely different ingredients, techniques, butchery and fire making. This course would also be suitable for newcomers to High Grange who just love cooking over fire!


DEER IN A DAY

Get out in the woods to cook and eat a whole deer. At Deer in a Day you’ll learn butchery techniques and about different cuts of venison, as well as all the sides. We’ll explore how to get the best out of whatever cut you are cooking and how to cook it over fire. We’ll even do some curing! 

This is a seasonal course as venison isn’t available year round. A true celebration of the season - the Autumnal crops and foraged finds go incredibly well with this delicious meat.

CHRISTMAS FIRE SCHOOL

We believe everyone should cook outdoors more whatever the weather, so join us for a day in the woods to discover how to make your Christmas cooking simple and enjoyable on your ceramic BBQ. We have a selection of Kamado Joes but the techniques can be applied to any outdoor ceramic BBQ.


ASADO FIRE SCHOOL

This course focuses on Argentinian Asado fire cookery. If you’ve watched the Francis Mallman episode of Chef’s Table on Netflix then this is the course for you.

KAMADO FIRE SCHOOL

Ceramic barbecues are becoming increasingly popular, and HG is the place to learn how to get the best out of these incredible grills. Whether you have a Kamado Joe, A Big Green Egg, a supermarket own brand or if you just want to see what they can do before a considered purchase, we’ll put ur family of KJ’s through their paces, covering low and slow, smoking, grilling, rotisserie and LOTS more. Luke has worked extensively with both Kamado Joe and Big Green Egg over the years producing content, training and developing recipes.

High Grange is an Icsa centre of excellence

We are an Accredited ICSA Cookery School by our inspectors, achieving our highest award of ‘Centre of Excellence’ for Outdoor cooking and fire experiences.

The depth, knowledge of outdoor cooking shared by Luke is second-to-non. Luke’s experience with a wide range of outdoor cookery at all levels provides him and the students with impeccable knowledge and skills to adapt, and deliver an excellent range of cookery classes and outdoor experiences. Experience does not always guarantee to make a good teacher, however Luke’s ability to adapt and deliver clear concise instructions to his students, with excellent two way communications, was evident during our intensive assessment.
