This week’s takeaway - chinese bbq pork, beef in black bean sauce…

We’re going old school Chinese takeaway again this week. This time we’re going to everyone’s favourite - beef in black bean sauce as well as some incredible organic pork collar - barbecued ‘char siu’ style with pak choi. Then egg fried rice obviously and some prawn crackers to scoop it all into your gob….

Of course we’ll be making our own black bean sauce - from our own fermented black beans and the pork collar will be cooked over charcoal until it’s sticky, sweet and succulent. A couple of years ago I made my own prawn crackers - using whizzed up prawns, tapioca flour and an awful lot of de-hydrating, baking and frying which resulted in the MOST……. average prawn crackers in history….

So these ones will be fried fresh but out of a packet! Sometimes life’s too short….
