Wednesday 11th May 7-10pm - Fire Supper inspired by Argentinian fire-cooking legend Francis Mallman's "Seven Fires"

Our Fire Suppers are the evening version of our new informal Cookbook Clubs (and you can use Cookbook Club vouchers here too), with the same great ingredients and meticulous technique as our Feast nights, just a little bit more relaxed!

So on the evening of Wednesday 11th May, we are hosting a very special Fire Supper to celebrate the book that made all of this happen: Francis Mallman’s ‘Seven Fires’.

Arrive at 7pm to watch the sunset over the rolling Blackdown Hills with something cold and boozy. Then enjoy 3 courses of Argentine fire-cooking legend Francis Mallman’s food including a whole lamb, cooked asado style on one of our fire pits. Luke will chat with you about the book and explain why it has been so influential to us and largely led us to High grange. Taxis 9.45 for 10pm.

Smashed beets with greens, goats cheese and garlic chips

Whole lamb asador, chimichurri, stacked ratatouille

Leche Quemada, burnt oranges with rosemary

After our second date, Sara went off for 6 weeks to travel around Argentina and whilst there ate at Francis Mallman’s restaurant ‘Seven Fires’. She rightly suspected that that might be something that I’d be interested in and bought me a copy of his cookbook - signed by the great man himself. I didn’t have the heart to say that I’d never heard of him at this stage so I read the book from cover to cover and became obsessed with his lifestyle, philosophy and techniques. Almost immediately I bought a giant smoker and barbecue for my tiny Brixton garden and started changing my mindset from being an indoor cook to an outdoor one.

No quotation from my entire Literature degree, to the complete works of Alan Partridge or ‘Withnail and I’ has stuck with me and made such an impression as this - an absolute game changer.

‘I adore dissonance in food – two tastes fighting each other. Charring or burning adds an extra dimension… the right amount of burning or charring can be delicious….I believe that many chefs and cookbooks make entirely too much of harmony’.

The idea of dissonance in food is so counter intuitive yet so alluring. Harmony is fine but like the Sex Pistols ripping up the rule book in music, so Mallman with his smoke and burning and char made, for me, everything more exciting.
