High Grange At Home

We were totally blown away by both the uptake and the feedback from last week’s High Grange at Home Takeaway so… we’re doing it again. This week I’m feeling like I need the restorative zing, heat and freshness of Thai Food and as such I’ve been re-reading Anglothai’s great book Kin Thai which is my recent-ish go to for great Thai - along with Baan by Kay Plunkett-Hogge.

Because I have access to the best beef in the world from Meat MattersI thought I’d do a rich, aromatic beef massaman using ex-dairy cows from South Wales. Again- we use the same suppliers and barbecues for our takeaways as we do for our feasts or weddings. I’ll smoke the beef first to give it a bit of HG smoky magic and enrich it with grilled bone marrow. Deep, dark, not ‘spicy’ but deeply ‘spiced’, massaman is one of the great dishes of the world. I think plain steamed jasmine rice works best here and then a fresh zingy, sweet, hot, sour salad with barbecued chicken and crunchy peanuts:

February events

Friday 10th is the date for our February feast which will be indoors in our cosy Shippen. From a chef’s perspective February’s a tricky month - not quite Spring with it’s wild garlic and Jersey Royals but not the depths of Winter either. Don’t fret though because we have the most stunning ingredients here in East Devon and you can expect the first greens from our veg patch, fish and shell fish from the incredibly abundant Lyme Bay and organic meat from whole carcasses that we butcher in house. February can be bleak - You need a night out in February that ISN’T Valentines Day so make it this one (and stay in on the ‘big’ night then with no pressure and a takeaway….) You can book in here.
